Wild Ducks in Orange Sauce

Necessary Ingredients:

2 wild ducks 3 tablespoons baking soda 1 medium onion, chopped 2 apples, sliced 1 stalk celery, chopped salt and pepper * cup pure honey 1 can concentrated orange juice 2 tablespoons butter 1 tablespoons lemon juice

Cooking Directions:

Soak ducks overnight in a dish pan filled with cold water and 3 tablespoons baking soda. Drain ducks and place onion and apple in the cavity. Season with salt and pepper and place in roaster with a little water. Cover and roast at 350º for 1 hour. Make sauce by combining orange juice, honey, butter, and lemon juice in a sauce pan and heat. Baste duck with orange sauce until brown and tender. Remove stuffing, but do not serve. Serve duck garnished with orange slices.
