Caribou Steaks with Green Peppercorn Sauce

Necessary Ingredients:
4 Caribou steaks 1" Thick4 cloves crushed garlic4 tablespoons olive oilsalt & pepper to tasteGreen Peppercorn Sauce:4 tablespoons butter1/4 cup whole green peppercornssalt to taste1 tablespoon Cognac |

Cooking Directions:
Carefully trim away all visible fat. Combine garlic and olive oil. Pour over steaks and marinate in refrigerator overnight. Season steaks with salt andfreshly ground pepper. Broil or grill 5 - 7 minutes per side or until meat has only a hint of pink. Transfer to warmed plates.For the sauce: In small saucepan, melt butter then stir in remaining ingredients. Heat to boiling, stirring occasionally. Pour sauce over each steak. Serve immediately. Serves 4 |
