Elk Chili

Necessary Ingredients:

1-1/2 - 2 pounds ground elk 1 medium onion 3 stalk celery 1 can stewed & peeled tomatoes 1 large can Sacramento tomato juice 1 can (hot) kidney chili beans 5 jalapeno peppers (if desired) 3-4 tbsp. chili powder or to taste Shredded cheese

Cooking Directions:

Brown the elk and drain the fat. Next add the onion and celery until its tender. Pour in the tomato juice and add the peeled tomatoes, kidney beans, chili powder and peppers. Simmer on medium low heat for 40 minutes then add more peppers and chili powder. Serve with cheese melted on top.
