Elk Chili

Necessary Ingredients:
1-1/2 - 2 pounds ground elk1 medium onion3 stalk celery1 can stewed & peeled tomatoes1 large can Sacramento tomato juice1 can (hot) kidney chili beans5 jalapeno peppers (if desired)3-4 tbsp. chili powder or to tasteShredded cheese |

Cooking Directions:
Brown the elk and drain the fat. Next add the onion and celery until its tender. Pour in the tomato juice and add the peeled tomatoes, kidney beans, chili powder and peppers. Simmer on medium low heat for 40 minutes then add more peppers and chili powder. Serve with cheese melted on top. |
