Mexican Blackened Fish

Necessary Ingredients:

1 tablespoon paprika 1/2 teaspoon allspice 1 teaspoon dried oregano 1/2 teaspoon cumin 1/2 teaspoon salt 1 jalapeno, seeds removed 4 garlic cloves 2 tablespoons olive oil 2 teaspoons frozen orange juice concentrate 4 fish fillets (6-oz.) halibut, red snapper, or sea bass 2 lemons, juiced

Cooking Directions:

Combine paprika, allspice, oregano, cumin, salt, jalapeno, garlic, olive oil, and orange juice in a food processor. Puree until smooth. Place fish in a dish and cover with pureed mixture; cover with plastic wrap and place in refrigerator 1 hour. Heat a nonstick pan over medium-high heat; add the fish and cook 4 minutes per side or until flaky to the fork. Sprinkle with lemon juice and chopped cilantro. Serves 4.
