Baked Mushroom Sole

Necessary Ingredients:

1 1/2 pounds sole fillets 1/2 pound mushroom, trimmed and sliced 1 cup white wine 1/4 cup whipping cream 2 egg yolk

Cooking Directions:

Preheat oven to 350°F. Place sole fillets in a baking dish; add mushrooms and white wine. Bake until tender about 30 minutes. Drain liquid into a saucepan and reduce to about half over medium heat. Whisk cream and yolks together in a cup; add to reduced pan juices and blend well. Pour over fish and return to oven briefly to glaze.
